Steam juicing is a great way to use up excess fruit
Did you know that it is very easy to preserve your own fruits by turning them into delicious, healthy fruit juices and cordials? Most people know about pressure canning and dehydrating as a means of preservation, but not everyone knows about steam juicing. Basically this is a method in which fresh ripe fruit is cooked in steam, and the resulting syrupy juice is caught and bottled. Before the days of the supermarket, a steam juicer used to be considered essential equipment for any body who had access to fresh fruit. Although most people prefer to buy juice as they need it, making your own can be a very satisfying and healthier alternative.
Steam juicers are essentially a large multi level boiler. A bottom pan holds water, which is brought to the boil causing steam to rise. The steam enters another pan above the first, in which a basket holds your selection of fresh ripe fruit suspended above a cone shaped juice collecting pan. The hot steam causes the fruit to break open, releasing the juice inside – and this is caught by the juice pan. The entire process takes about 1-1.5 hours, after which time you will have about a gallon of delicious, concentrated juice waiting to be tapped off.
Steam juicing is a really failsafe method of using up any excess fruit you may have. The juice you make this way is generally sweetened (it is easiest to jut add the sugar to the fruit as it stews in the steamer) and bottled for storage. When my mother used to make apple and pear juices, we would store it for up to a year without any refrigeration, so that we could enjoy it all year long.
Steam juicers are not complicated, and are not expensive. Most modern juicers (still available from online stores like Amazon) are made of stainless steel or aluminium, and will last a life time.
